This coffee comes from the highland region of Yirgacheffe in Ethiopia, which is known worldwide for its unique flavors.

This coffee is grown from ancient local varieties (Heirloom) and produced by Tracon, providing a fine example of the purity, sweetness, and complexity that characterize fine Ethiopian coffee.

This crop was naturally processed at the Adado station using traditional methods. After harvesting, the cherry kernels are initially sorted, with floating, unripe, or damaged kernels being removed. The remaining kernels are then washed with clean water and transferred to raised drying beds, where they are turned regularly to ensure even drying and avoid over-fermentation.

After drying is complete, the coffee is left to settle in a cooperative warehouse, allowing the aromas to settle before export.

This meticulous attention results in a cup of coffee rich with hints of red fruits, smooth chocolate notes, and a refreshing berry finish.

A balanced coffee, reflecting the processing skill and unique character of the region, to give you a pure and vibrant experience in every preparation.

Moisture content: 30g/30"

Temperature: 91 C

Steps: After the hydration stage, three 96.6 ml pours, total 320 ml.

 

2- Espresso:

Coffee quantity: 18 grams

Extraction: 40 ml 

Time: 32"

Temperature: 93 C
